Chocolate Cake

(this is an all-time favorite in our group... it was also Jon and Kelsie's wedding cake recipe!)

3/4 cup unsweetened baking cocoa
3/4 cup butter
1 2/3 cups boiling water
2 1/2 cups flour
2 cups rapadura (or sugar)
1/2 cup sour cream, yogurt, or mayonnaise (Note:
This is the "secret" ingredient to making a cake moist!)
2 eggs
2 tsp baking soda
1 tsp sea salt
1 tsp vanilla

Heat oven to 350 degrees. Grease 13x9 x 2 pan.

In large bowl (or mixer), place cocoa, butter, and boiling water; with spoon (or mixer whisks), stir until mixture is smooth. Add flour; rapadura or sugar;
sour cream, yogurt, or mayonnaise; eggs; baking soda; salt; and vanilla; beat on low speed until smooth. Pour batter into prepared pan. **You can also make these into cupcakes, which everyone LOVES! :-)

Bake 35-40 minutes or until done in center. Cool completely.

Rapadura Butter Frosting

2 cups (4 sticks) butter, softened
1 Tbsp vanilla
3 cups powdered sugar
2/3 cup rapadura

In mixing bowl, cream butter. Add vanilla. Mix in powdered sugar and rapadura.
